Dark-purple red; demandingly vibrant. Cabernet’s aromatic signature writ large: blackberry, cassis, and the faintest whiff of tomato leaf. Lifted, attractive, perfumed. Oak’s bouquet sits somewhere in the background, adding a sophistication to this otherwise charmingly and beguilingly pure and honest red wine. Cool red berry fruits, but berry fruits that are also ripe and rounded. The tannins are smooth and welcoming, yet cabernet tannins will do what cabernet tannins will do: sweep through the palate. Accompanying them is a neat acidity and a slick, balanced alcohol. Cabernet sauvignon in equilibrium.

Enjoy this wine with Beef stew, a humble butcher’s sausage, some mashed potato with a drizzle of truffle oil. Good cabernet always speaks well to old-fashioned food, albeit with that drizzle of luxury.
