Invertase: Overview
Invertase is an enzyme that catalyzes the hydrolysis of sucrose (table sugar) into its constituent sugars, glucose and fructose. This process, known as "inversion," results in an "invert sugar," which is sweeter and has different properties than sucrose. Invertase is widely used in the food industry, particularly in the production of candies, chocolates, and other confections, where it helps maintain moisture, prevents crystallization, and improves texture. It's also used in the production of soft-centered candies, where the enzyme converts the sucrose filling into a syrupy liquid.
