Over 100 days, moisture evaporates from the beef — concentrating the flavour dramatically — while natural enzymes break down the muscle fibres, creating an exceptionally tender texture. A 100 day ribeye has a distinctly nutty, almost buttery depth that sets it apart from anything you'd find in a supermarket.
Our 32 day ribeye is the benchmark — clean, rich and deeply satisfying. The 45 day adds noticeably more intensity. The 100 day is in a different category entirely — far more concentrated, nuttier and more mineral. It's a steak for people who already love dry-aged beef and want to go further.
Bring to room temperature for 45 minutes. Season with sea salt only. Sear in a very hot cast iron pan with beef dripping — 2-3 minutes per side for medium-rare. Rest for at least 5 minutes. Don't overcook — medium-rare lets the aged flavour shine.
