A Chateaubriand is a thick-cut roasting joint taken from the centre of the beef fillet — the widest, most uniform section. It's traditionally served as a sharing cut for two, pan-seared and then finished in the oven. It combines the extreme tenderness of fillet with the drama of a roasting joint, making it one of the most classic and indulgent cuts in French cuisine.
A Chateaubriand typically serves two people as a generous main course. Ours is trimmed and tied in-house by our butchers to ensure even cooking throughout. If you're feeding more, the Whole Fillet is the natural step up.
Bring to room temperature for 45 minutes. Season generously with sea salt. Sear in a very hot pan with butter and beef dripping until browned on all sides. Transfer to the oven at 200°C — approximately 15-18 minutes for medium-rare. Rest for at least 10 minutes before carving into thick slices. Use a meat thermometer — 52-54°C internal for medium-rare.
